Garry Stokes


Garry Stokes has more than 40 years experience in the hospitality industry, working in many areas of the industry. Garry’s started his career in Commercial Cookery, working in Australia and overseas Hotels gaining experience in a wide cross-section of establishments. Garry moved into the customer service, and staff development area of the Hospitality Industry developing programs to enhance the service experience for hotel guests. Garry has more that 2years teaching experience in the private and public sector and holds a Bachelors of Adult Education and a Masters of Education, from the University of Technology, Sydney. Garry also holds a “Food and Beverage Management” qualification from Cornell University in the USA. Garry has been recognized for his outstanding achievements in the Hospitality Industryreceiving a Legend of Hospitality Award from Tourism Training Australia, Trainer of the Year 2014 from Service Skills Australia and Recognition by TAFE NSW for achievement in outstanding team development. Garry has extensive Industry contacts and is an active member of the Tourism Hospitality and Catering Institute of Australia, Director of Tourism Training Australia and attends meetings for the Industry TrainingAdvisory Board (NSW Service Industry).

Garry is often invited to speak at  Hospitality Industry events , imparting his knowledge to the industry. Garry also undertakes research projects and develops reports on student management and course structure in the hospitality industry.   

With a vast experience in the Hospitality industry Garry ensures that individual attention is given to each function and event. From small private diners for special occasions to more large scale events , each event is special and must reflect the Cas Cat name.     

Geoff Gougeon 

Client Services Manager

Geoff has a vast knowledge of hospitality, events, marketing and client service sectors from small community events and productions to national celebrations, theatrical events and corporate marketing functions. Commencing in the theatre, Geoff has experience sourcing performing rights and venues, producing shows and events these ranged from award-winning drama at the Opera House to Dance Parties, media events and joint ventures or sponsorships with commercial partners.

Geoff is your first point of contact who will work with you to take your brief and develop a proposal to deliver your vision to budget and timeline.

Paul Harrington

Creative Food Design Manager

Paul has 40 years’ experience in the hospitality and events industry. He started in Ireland and London as a chef, and moved to Sydney where he also worked as a chef, before moving into catering events management. His experience ranges from reproducing classical dishes, to creating new dishes, and adapting traditional dishes from French to East-West fusion cuisine. He has even borrowed and adapted ideas from traditional bush tucker, tapping into a rich vein of native Australian produce from the outback. His creative ideas often take the consumer away from the usual fare, to something a bit more unusual and memorable.

Monica Pasvolsky

Senior Events Specialist

Monica is one of the many ‘voices’ of Cas Cat Events. Monica’s bubbly personality and pleasant manner mixed with her great knowledge of the events industry makes you feel comfortable that you are in great hands! Monica has worked as a trainer in the event industry for a large number of years whilst also trained in the Tourism sector.
